Rainy Day Lasagna Sandwiches!

So a few days ago I had a cooking day. On cooking days, I gather up a whole bunch of ingredients and make as many meals as I can for the week over a period of about 5 hours. I made stuffed shells, shredded chicken for soup, spicy shredded chicken for tacos, a chicken soup stock and some chocolate chip cookies for fun. What I didn't intend on making was a somewhat burnt lasagna! (Well actually, the cheese on top was the burny part, the lasagna itself was perfect!) I must learn to set my timers properly! YIKES!

So instead of serving it to my family as it was... I got creative (and embarrassed) and served scoops of day-old lasagna (it's always better the next day!) on a warm and chewy garlic ciabatta. YUM. Yum is all I can say. I HIGHLY recommend this as an alternative to lasagna on a plate. It looked so yummy I had to take a picture... or 10. But then I couldn't help but smell it and had to quit taking pictures so I could eat it! :) Oh well... Here is what they looked like!
