White and Green- Chicken and Beans

This was perhaps my best soup ever- and I didn't use a recipe! I got the basic idea from a Picky Palate post, but I ended up using whatever I had in the pantry! This turned out awesome...great for wintry (or springy) weather!


White and Green Soup

Three boneless, skinless chicken breasts cut into 1" cubes
3 cups chicken stock
1 can vegetable stock
3 cups water
2 cups frozen green beans-I used the organic green beans from Trader Joe's
1 can northern beans (white) drained
1 1/2 cups chopped celery
1/2 cup whole grain brown rice (instant)
1/4 tsp. ground red cayenne pepper
salt
pepper

I started by adding the vegetable and chicken stock to my kettle cooker. I boiled the chicken until done. Then I added the green beans and white beans. I cooked those for about 10 minutes, then added the water, celery and the rice and cooked for 6 more minutes. I seasoned with the cayenne pepper and a hint of salt and pepper. YUM!

I couldn't get the soup cooled down fast enough to take the picture. It smelled so good and I was trying to hurry up, so the picture is really steamy! Sorry!
